Festive Raspberry Almond Thumbprint Cookies

These shortbread-y almond thumbprint cookies are flecked with tiny almond pieces and have ruby-like raspberry jam centers. Not overly sweet and with hints of almond flavor in each bite, these crunchy on the outside, chewy on the inside cookies are perfect with a glass of almond milk.

    Oh man, thumbprint cookies remind me of my nani Dorothy. She used to buy those Peppridge Farm ones, and she always had a bag around when we came to visit.

    Wow. Those remind me of the olden (really olden!) days when I used to make thumbprint cookies for my kids. I saw a post on quince jam over at wing it vegan, and I think it would be cool to use it for thumbprint cookies. Have a safe and fun trip to Eugene. I’m looking forward to your reactions to the move.

      Thank you Andrea! Quince jam sounds so yummy and these thumbprint cookies are so versatile that I think any jam would go.

      We made it to Eugene and so far am digging it! We are loving the smaller feel of this city compared to Atlanta a lot. I’m sure I’ll be mentioning bits and pieces of Eugene in future posts!

      Thanks Cadry! We survived the trip. The pups did an amazing job in the backseat of our Buick. We stuffed pillows on the floor between the back of the front seats and the back seats to create a bigger back seat area for them. And we made sure to stop plenty for them. The pups have been a little stressed with all the changes (Miles, the black one more than Nikko) but as we settle in Eugene, they are doing better and better and seem more relaxed and happy.
