Raw Strawberry Cream Pie

I found this recipe and thought it would be great to try out in my new vitamix!

It was a labor of love laborious, but only due to the young coconut.  Without a heavy duty cleaver or machete, I had to resort to extreme measures to bust into that thing (think hammer and chef’s knife and a plethora of coconut shell shavings all over the kitchen floor).  The end results was worth it!  If I made this again, I would add sweetner to the filling as it wasn’t sweet enough for me.

I stuck to the original recipe pretty closely with only the following mods:

– used 2 tsp of vanilla extract (liquid) whenever it called for vanilla beans b/c I didn’t have vanilla beans

– used ALL of the chocolate sauce…I’m glad I did this b/c it brings more sweetness to the cream part of the pie.

– used small coconut flakes on top instead of large one.

      I bought it reconditioned online because it was cheaper. It seemed like new to me. It’s been working great and I’ve never had any problems with it (knock on wood). I think I’ve had it for a couple of years so far. The recipe book that it came with was slightly bent but the machine itself was, from what I could tell, in perfect condition. I totally recommend checking out the reconditioned series based on my experience. I believe they still offer a 30 day guarantee even with the reconditioned series. Let me know which one you decide on.
