One Pot Soup

This soup reminds me of something my mother used to make, sans meat of course. It has a rich coconut-curry-like taste to it and is full of potatoes, butternut squash, onions, acorn squash, carrots, parsley, coconut milk, and an array of aromatic and flavorful spices. click to read full post.

The recipe came from AV, though we did make small variations to it such as adding the different types of squashes. This dish is fairly easy to make because all you do is pretty much just throw stuff into a big stock pot (the chopping of the vegetables is actually the bulk of the work in this meal). The recipe also makes a lot of soup which is great for leftovers! We had ours over some jasmine rice. I will most likely make this again because I’d love to experiment with adding in different types of vegetables.
