N used pho broth cubes the other night, but not to make pho. Instead, he made the pho broth and then threw in udon noodles, vegan ham, shiitake mushrooms and green onions. It was sort of like an asian spin on chicken noodle soup, except with “ham”.

I love pho! There are pho broth cubes? Huh! I’ll have to try that. How were the prawns?

I wish I could find vegan pho broth at my local asian market. Pho is usually beef broth-based here in the SF Bay Area. While there are creative vegan Japanese places here, I could definitely use some vegan pho! Lucky you
